Equipment
- 1 12 inch or 14 inch Pan
- 1 4 qt pot
Ingredients
Salmon
- 4 Salmon Filets
- 2 tbsp oil
- 2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1/2 Juice of lemon
Pasta Sauce
- 2 tbsp butter
- 1 tbsp sun dried tomato oil
- 1/2 onion diced
- 4 garlic cloves minced
- 1/3 cup sun dried tomatoes chopped
- 1/2 cup chicken broth
- 1 1/2 cup heavy cream
- 1 tsp Italian seasoning
- 1/4 tsp dried red pepper flakes
- 1/2 tsp paprika
- 1 tsp salt
- 1/4 tsp black pepper
- 1/3 cup Parmesan cheese
- 3 tbsp fresh parsley chopped
- Pasta of choice
Instructions
Salmon
- Season salmon with the ingredients listed.
- Sear in a pan on medium high heat for about 3-4 minutes until it develops some color.
- Flip and do the same on the other side.
- Lower the heat a bit, add butter and once foaming baste until salmon reaches 145F internal.
- Remove from the pan and let rest.
Pasta Sauce
- Melt butter & pour the oil from the sun-dried tomatoes.
- Cook onion, garlic and chopped sun-dried tomatoes until softened & fragrant.
- Deglaze with chicken broth.
- Pour in heavy cream, seasonings & freshly grated Parmesan.
- Add your al dente pasta of choice along with salmon filet, fresh parsley & Parmesan.
