This recipe combines all the best flavors that are in a delicious authentic lasagna into one warm bowl of soup. Don’t get me wrong, there are very few things that beat a well made lasagna but it could be a tedious and lengthy process for your average home cook. This recipe brings a lasagna into a one pot soup dish that’ll be ready in less than 30 minutes.

- Protein – 50-50 blend of ground beef & Italian sausage is ideal but you can certainly substitute just ground beef.
- Broken Lasagna Sheets – Using lasagna noodles would be more authentic but any choice of noodle or pasta should be fine as well.
- Ricotta – This is very important, as this simulates the “bechamel sauce” in a traditional lasagna.

- Brown beef
In a large pot over medium high heat, cook your ground beef and/or italian sausage with salt and pepper until browned and cooked through. Carefully drain grease with a paper towel.
- Sauté onions and garlic
Add onions to the same pan. Sauté until slightly softened. Toss in minced garlic and cook until fragrant.
- Cook down sauces and spices
Stir in tomato paste and cook until brick red. This removes some of that acidic tomato flavor. Add jar tomato sauce and beef broth along with all your spices.
- Toss in your pasta on choice
This is where I like to add lasagna noodles/sheets. Break them up into bite size pieces. Cook in the sauce until al dente. Also add in your spinach to be cooked at the same time along with chopped basil leaves for extra flavor.
- Make your ricotta cheese mixture
Mix your 3 cheeses: ricotta, mozzarella & Parmesan along with minced parsley.
- Serve
You can either dollop the cheese mixture directly into the soup or in your bowl. Garnish with parsley and parmesan.

There is no shame in using any other pasta shape. Pasta is pasta. Use lasagna noodles if you can get your hands on it and for the nostalgic feel but the possibilities are endless.

Ingredients
- 1 lb ground beef, 80/20
- 1 lb mild or spicy Italian sausage (optional)
- 1 yellow onion, chopped
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 24 oz jar tomato sauce
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 1 tsp oregano
- 2-3 basil leaves
- 6 cups chicken broth
- 8-10 oz broken lasagna noodles
- 2 cups fresh spinach leaves
- 10 ounces ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
Instructions
- In a large pot over medium high heat, brown ground beef with salt & pepper.
- Add onion to the same pan & cook until softened. Toss in garlic, mix until fragrant.
- Add tomato paste, cook down & season with Italian seasoning, red pepper flakes & oregano.
- Pour your favorite tomato sauce along with broth & basil leaves.
- Let it come to a boil before adding in lasagna noodles.
- Once pasta is cooked, add spinach leaves.
- Serve with a dollop of ricotta cheese mixture.
- Garnish with fresh basil, parsley & Parmesan.
