Lasagna Soup

Sometimes you want all the flavor of a lasagna but don’t have the time.

Ingredients
  

  • 1 lb ground beef, 80/20
  • 1 lb mild or spicy Italian sausage (optional)
  • 1 yellow onion, chopped
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 24 oz jar tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp  red pepper flakes
  • 1 tsp oregano
  • 2-3 basil leaves
  • 6 cups chicken broth
  • 8-10 oz broken lasagna noodles
  • 2 cups fresh spinach leaves
  • 10 ounces ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated

Instructions
 

  • In a large pot over medium high heat, brown ground beef with salt & pepper.
  • Add onion to the same pan & cook until softened. Toss in garlic, mix until fragrant.
  • Add tomato paste, cook down & season with Italian seasoning, red pepper flakes & oregano.
  • Pour your favorite tomato sauce along with broth & basil leaves.
  • Let it come to a boil before adding in lasagna noodles.
  • Once pasta is cooked, add spinach leaves.
  • Serve with a dollop of ricotta cheese mixture.
  • Garnish with fresh basil, parsley & Parmesan.
