Chimichurri Garlic Butter Steak Bites w/ Mash

Garlic Butter Steak Bites
- 2 lbs ribeye, filet or sirloin cut into bite size pieces
- 1 tbsp avocado oil
- 3 tsp Cajun or Montreal seasoning
- 3 tbsp butter
- 3-4 garlic cloves minced
- 1 tsp fresh parsley chopped
Creamy Mashed Potatoes
- 4-5 Yukon Gold Potatoes peeled
- 1/2 cup heavy cream
- 1/2 cup milk
- 3 garlic cloves whole
- 2 sprigs rosemary
- 2 tsp kosher salt
- 1 tsp chives or green onions
Chimichurri
- 1/2 cup olive oil
- 2 tbsp red wine vinegar
- 1/2 cup fresh parsley finely chopped
- 3-4 garlic cloves finely minced
- 1 tsp dried red chili flakes
- 3/4 tsp dried oregano
- 1 tsp kosher salt
- 1/4 tsp black pepper
Garlic Butter Steak Bites
Season steak with oil and cajun/montreal/all purpose steak seasoning.
Heat a large pan to high heat and sear steak pieces for a 3-4 minutes on each side. Remove from the pan and set aside.
Melt butter, add garlic and incorporate the steak bites along with a sprinkle of fresh parsley over top.
Mashed Potatoes
Boil your peeled potatoes for about 30-35 minutes with a pinch of salt.
In a small saucepan, melt butter and add cream, milk and aromatics. Bring to a boil, remove from the heat & cover for at least 15 minutes.
Once your potatoes are fork tender, drain immediately and use a ricer for a smoother texture.
Strain your butter cream mixture onto your potatoes. Mix and serve with chives or green onions.
