Authentic Cuban Frijoles Negros (Black Beans)

Equipment

  • 1 Pressure cooker

Ingredients
  

  • 14 oz dried black beans
  • 4 cups water
  • 2 bay leaves
  • 1 tsp salt
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 4 garlic cloves minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 cup dry cooking wine
  • 1 tsp tomato sauce or ketchup
  • 1 tbsp white vinegar
  • 2 tsp white sugar
  • salt & pepper to taste

Instructions
 

  • Wash & rinse dried beans.
  • Pressure cook all the ingredients above for 35 min.
  • In a separate pan, cook onion and bell pepper until softened.
  • Add in your spices and garlic, mix until fragrant.
  • Incorporate the soffits into your softened/cooked beans.
  • Now add in tomato sauce, vinegar and sugar.
  • Set pressure cooker to sauté and simmer on low for 15-20 min or until your desired thickness.
