Ingredients
  

Chicken Marinade

  • 2 lbs bone in chicken thighs and/or drumsticks
  • 3 garlic cloves grated
  • Juice of 1 lime
  • Juice of 1 sour orange
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp olive oil divided

Rice

  • 2 tsbp olive oil
  • 1 medium yellow onion diced
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 4 garlic cloves minced
  • 8 oz tomato sauce
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 bay leaves
  • 1/2 cup dry cooking wine
  • 3 cups chicken stock
  • 1/2 tsp "bijol" (yellow food coloring) or turmeric
  • salt & pepper to taste
  • 2.5 cups uncooked short grain rice
  • 11 oz beer
  • 1/3 cup frozen green peas
  • garnish with cilantro & roasted red bell pepper strips
